How Science Shows You Should Eat Butter

From October the 17th to 19th, 2025 Drs Mark and Sam Bailey will be giving a number of live talks at the Wise Traditions Conference in Salt Lake City, Utah.
Unexpectedly, the plan was recently put in jeopardy through a nefarious attack against Dr Sam, the details of which will be made public when matters before the courts are settled. However, the travel to the event has been confirmed and for the first time ever, Dr Tom Cowan, Dr Andrew Kaufman and the Drs Bailey will appear alongside one another in the “Virus Deniers Unite Panel“!
The incredible woman making all this happen is the one and only Sally Fallon Morell, the founder of the Weston A. Price Foundation and the author of Nourishing Traditions, the best-selling cookbook that sparked a global movement. Sally also knows all about the problems with germ “theory” and virology which is why she wrote The Contagion Myth with Tom Cowan. Whether its pharmaceuticals, vaccines, herbicides or contamination of our environment, its a safe bet that Sally has spent some time looking into the relevant research.
In this video Sally shares her journey over the decades from English teacher to health and food freedom pioneer after discovering the work of Dr Weston Price. She discusses how dietary choices from pregnancy and infancy shape our dental and general health in ways that most people have failed to recognise. A lot of ground is covered in this interview and you are bound to pick up some new wisdom in your quest for true health…
Here’s a summary of Nourishing Fats: Why We Need Animal Fats for Health and Happiness by Sally Fallon Morell (2017) — its main arguments, themes, and some of the evidence she presents. If you like, I can also pull out criticisms or counterpoints afterwards.
What the Book Argues
Sally Fallon Morell’s central thesis is that animal fats (butter, lard, full‐fat dairy, egg yolks, etc.) are essential to human health, both physically and mentally, and that many of the negative beliefs about saturated fat and cholesterol are misplaced, based on weak or flawed evidence. She wants to rehabilitate the reputation of animal fats and show how Western nutritional advice (especially low‐fat guidelines) has done damage.
Some of the main claims:
-
Animal fats are not villains. They play vital roles in many body systems (brain, hormones, immune function, etc.). Nourishing Our Children+3The Real Food Company+3Weston A. Price Foundation+3
-
Many of the health issues we see—infertility, depression, chronic disease—can be mitigated or prevented by including more of these traditional fats in the diet. Barnes & Noble+2Nourishing Our Children+2
-
Vitamins that are fat‐soluble (A, D, K2) depend on animal fats for absorption, and many people are deficient in them. The Real Food Company+2Barnes & Noble+2
-
Certain important fatty acids (like AA – arachidonic acid – and DHA) are more abundant (or only reliably present) in animal fats, and they’re important for brain function, gut health, skin, etc. The Real Food Company+1
-
Industrial/processed fats (including many seed oils / vegetable oils) and trans fats are much more harmful, especially when they oxidize or are rancid. Fallon Morell argues that much of the harm attributed to “fat” in general is really coming from these processed fats. The Real Food Company+2Nourishing Our Children+2

Some Strengths & Points of Interest
-
Fallon Morell draws heavily on traditional diets and historical nutrition, invoking the Weston A. Price Foundation’s work on nutrient‐dense ancestral foods. The Real Food Company+2Nourishing Our Children+2
-
She attempts to juxtapose recent scientific studies with older assumptions, pointing out where the evidence against animal fats is thin or inconsistent. Weston A. Price Foundation+1
-
She emphasises fat’s role not just in physical health (heart, immunity etc.) but also in mental well‐being: mood, brain function, fertility. This broader angle is less common in many diet books. The Real Food Company+2Barnes & Noble+2
